Carrot is a root vegetable, usually orange in colour. But purple, red, white, and yellow varieties also exist. The most commonly eaten part of a carrot is a taproot. Carrots are widely used in many cuisines, especially in salads. Carrot salads are a tradition in many regional cuisines. Eaten raw or briefly cooked, carrots are an excellent source of vitamin A, carotene and potassium.
