Carrot Nutritional Breakdown
Carrots, an excellent source of vitamin A, provides 210% of the average adult’s daily needs. They also provide 2% of calcium needs and 6% of vitamin C needs as well as 2% of iron needs per serving.
The beta-carotene of carrots, the antioxidant, gives their bright orange color. Beta-carotene is absorbed in the intestine and converted into vitamin A during digestion.
According to the United States Department of Agriculture, one serving size (one medium carrot or ½ cup of chopped carrots) of carrots provides:-
6 grams of carbohydrate
1 gram of protein
3 grams of sugars.
Carrots also contain fiber, folate, manganese, magnesium, phosphorous, potassium, vitamin E and K and zinc.
Folate deficiency is a low level of folic acid in the body. Also known as vitamin B9, it is involved in adenosine, guanine, and thymidine synthesis (part of DNA synthesis).
